Guest Video: Ofelia’s Mexican Kitchen

Ofelia Barrios is our second guest to share her stories and recipes in a video for Open View Gardens. Ofelia is a wonderful cook of Mexican food — during her time as a student at Middlebury College and her many subsequent visits to our home, she filled the house with ingredients she had brought from New York to make delicious, home-style Mexican dishes. In the video, Ofie not only explains her techniques for making chiles rellenos and tostadas but also shares how cooking reconnects her with her family and culture and helps her relax after a long day at work.

    Ofelia: I just watched your video, I really enjoyed the Chile Relleno´s cooking procedure, I love all kind of rellenos, I am salvadorean and we love that kind of healthy food. Congratulations for being an expert cook!

    Barbara, great job!, that kind of activities are very important for people who want to share their local recipes.

      Patty, I’m delighted that you watched and enjoyed the video of Ofie teaching us how to make her fabulous chile rellenos. I think you’ll enjoy Elizabeth’s video for next week which features a fellow Salvadorean making her family’s fresco de ensalada–it, too, was delicious.

    I worked in Mexico City for 10 days or so a few years back and had chiles rellenos several times because I loved them so much. Now I know what this dish is all about and maybe I’ll try making it sometime.

    I loved the video Ofelia as well as the other recent guest posts.
